Like most things in life, finding the right balance is essential and salsa is no stranger to that concept. For whatever reason, salsa seems to be one dish that can be tricky to just throw together and get right. The balance between the tomatoes, peppers, and onions needs to be just right or just doesn’t taste good, in my opinion. It’s either too tomato-y, too spicy, too onion-y, too salty, or not salty enough. What do you do to master great salsa? Practice, of course!   1. Grab some fresh veggies for your salsa
  2. Get a cast iron skillet good and hot 
  3. Blacken all the veggies in the recipe – garlic, onions, peppers, tomatoes, etc
  4. Pulse ingredients in a blender
  5. Enjoy with your favorite chips or dippers!

Cast Iron Skillet Blackened Salsa

Blacken some veggies to create a smoky, hot salsa!

Ingredients

  • 5-6 cloves whole garlic
  • 2-3 jalapeños sliced (with seeds for heat; remove seeds for less heat)
  • 1/2 white onion coursely chopped
  • 6 vine ripened tomatoes
  • 1/2 lime juiced
  • 2 tsp garlic salt
  • 2 tsp black pepper
  • 1 tsp crushed red peppers

Instructions

  1. Preheat cast iron skillet on high and once it's nice and hot, add the garlic cloves, jalapeños, and onion to the dry skillet. Let the veggies sit in skillet a bit so they can blacken. Stir gently to flip them to the opposite site for blackening. After a few minutes, remove the blackened veggies and set aside.
  2. In the same hot, dry cast iron skillet, add your tomatoes. Tomatoes are a little trickier since they don't have sides, but allow to blacken in a spot and then rotate the tomatoes, turning until you get some nice blackened spots all around. The skins will crack and that's okay. This process could take 4-6 minutes.
  3. Remove tomatoes to cool a bit.
  4. Once cooled, put all the veggies into the blender, along with lime juice and spices. Pulse until it's a consistency that you like.
