Jump to Recipe I’m sure we all know by now that McDonald’s is now serving breakfast all day long. Good for them. And no, this is not a plug for McDonald’s. I’m not a fan! I am however, a HUGE fan of breakfast!! I love breakfast foods any time of day. In fact, one of my favorite acronyms is BFD (no, not that one) – Breakfast for Dinner.
I urge you to skip the McMuffin and instead choose a whole food breakfast that packs a powerful and tasty punch instead. Dig into one of my personal faves…the Amazing Avocado Eggwich! You can make this however you’d like…open faced or as a proper sandwich with a full English muffin. I typically opt for open-faced and will often poach two eggs to enjoy with half of a whole wheat English muffin. Shoot, you could even make two open-faced Amazing Avocado Eggwiches if you want. Create what suits you and your appetite.
Amazing Avocado Eggwich
Ingredients
- 1/2 Whole Wheat English Muffin
- 1 egg, poached
- 1/4 avocado
- Garlic salt
- Black pepper
- Cilantro leaf garnish
Instructions

Split an English muffin in half and toast lightly.

Poach one egg.

Once English muffin is lightly toasted, mash 1/4 avocado on top.

Place poached egg on top of avocado.

Sprinkle egg lightly with garlic salt and black pepper, to taste.

Add a few cilantro leaves for a nice garnish.
Recipe Notes
There are a few ways to poach an egg. The most popular is to either crack an egg and free float it in a simmering water boil. I find this to be messy, as the egg spreads in the water.
In addition, there are pan inserts to cup and contain the egg altogether while is cooks in the pan over gently boiling water.
Alternatively, you use a microwave egg poacher. This is fast, easy and it retains all of the egg, unless you cook too long or on high power and the egg explodes.
