Eggs are a great meal to start the day. They’re practically a perfect protein and they pair easily with so many other foods and flavors. Today’s flavor pairing is apple…the tart flavor of the Granny Smith apple, to be precise. I know that some people eat Granny Smith apples raw or fresh, if you prefer. I think of Granny Smith apples as cooking apples…as in they need to be cooked to be consumed. Which is why I chose this variety to cook with eggs today.
Prior to cooking this dish, I assumed that this particular apple would have brightened the eggs with tartness. And while there was a bit of bright tartiness (can I say that?) it wasn’t as bright or as tart as I would have liked. Of course, we’re not in peak apple season right now, so perhaps trying this dish in the winter time would bear the results I was seeking. Don’t get me wrong, it was very tasty and I will definitely make it again.
Apple Scramble
Ingredients
- 1 Tbs olive oil
- 1/2 Granny Smith apple chopped
- 2 Tbs shallots chopped
- 1/4 cup red bell pepper chopped
- 1/4 cup mushrooms chopped
- 1/2 tsp garlic salt divided
- 1/2 black pepper divided
- 1 handful fresh spinach
- 4 eggs whisked
- 1/2 cup milk
- 1/4 cup cheese shredded
Instructions

In a large sauté or sauce pan, warm up the olive oil over medium-high heat.

Sauté apples, shallots, bell pepper, and mushrooms for 3-4 minutes.

Add 1/4 tsp garlic salt, 1/4 tsp black pepper, and spinach and continue sautéing for 2-3 more minutes. Set aside in a separate bowl.

Whisk eggs and milk, with 1/4 tsp garlic salt and 1/4 tsp black pepper.

Wipe out sauté pan with a wet paper towel or use a fresh one. Heat pan to medium.

Add eggs and fold gently to cook, approximately 2-3 minutes.

While eggs are still soft (slightly mushy), add veggies, apples, and cheese and fold in gently into eggs until thoroughly distributed.
